

An Escanciar is one who pours the Sidra with a special technique.
Everyone shares the same glass, The Sidra is poured from overhead onto the rim of the glass.
This technique introduces air into the beverage, which gives it a nice sparkling sensation.
You have a drink, and toss out the last ounce. Don't ask why, just drink the Sidra!
